What is Edomae Sushi?
Edomae sushi originated in Tokyo during the Edo period as a fast, street-side delicacy.
Today, it represents the highest expression of Japanese sushi craftsmanship.
Unlike modern sushi, Edomae focuses on enhancing natural flavor through preparation — aging, curing, marinating, and precise knife techniques.
Each piece is carefully balanced between rice temperature, fish texture, and seasoning.
