EDŌMAE Sushi

The True Taste of Tokyo

Not fusion. Not trends. Just authentic Edomae sushi.

Our chefs trained in Tokyo under masters who themselves trained
under masters. This lineage—passed down through decades of silent
observation, rigorous practice, and unwavering dedication—is what
you experience at our counter.

In Japan, a sushi apprentice spends years learning to cook rice before
touching fish. Our chefs carry this discipline with them. Every
movement is intentional. Every piece is placed with precision
cultivated over decades.

THE ART OF EDOMAE

Ingredients from Japan

Edomae sushi was born in Edo—old Tokyo—where fishermen pioneered techniques to preserve and enhance the ocean’s finest offerings. This is not just preparation; it is ransformation through restraint.

What is Edomae Sushi?

Edomae sushi originated in Tokyo during the Edo period as a fast, street-side delicacy.

Today, it represents the highest expression of Japanese sushi craftsmanship.
Unlike modern sushi, Edomae focuses on enhancing natural flavor through preparation — aging, curing, marinating, and precise knife techniques.
Each piece is carefully balanced between rice temperature, fish texture, and seasoning.

SOURCED FROM JAPAN
